Cocoa Avocado Energy Bars
Brush an 8 x 8-inch baking pan with vegetable oil and line with parchment paper, leaving a 3-inch overhang. Lightly brush the paper with oil.
Process the dates and cocoa powder in the bowl of a food processor until mixture is finely chopped and sticky.
Add the almonds and process until well mixed. Add the avocado, coconut, chia seeds and honey. Pulse until mixture is well combined.
Add sunflower seeds and pulse a few times just to incorporate them. Press mixture into prepared pan and refrigerate until firm and chilled, at least 2 hours.
Cut into 16 bars, wrap in parchment paper and tie with twine, if desired. Store bars in the refrigerator.

- 1/4 cup unsweetened cocoa powder
- 1 cup almonds, toasted and slivered
- 1 avocado, halved, pitted and peeled
- ½ cup coconut, shredded
- 1/4 cup chia seeds
- 2 tablespoons honey
- ½ cup raw shelled sunflower seeds
