Step 1
Place garlic, shallot, white wine vinegar, lemon juice and a generous pinch of salt in a small bowl and let the garlic and shallot macerate for 10-15 minutes while you prep your other ingredients.
Step 2
Transfer the macerated ingredients to a blender or small food processor. Add avocado, anchovies, herbs, crème fraiche, and olive oil. Blend until ingredients are incorporated. Add additional salt and freshly ground black pepper to taste.
Step 3
This Green Goddess dressing is wonderful served on a salad of hearts of romaine or butter lettuce, or it can be used for a dip for crudité.
Enough to dress 1 large or 2 small-medium salads – can be stored in the refrigerator overnight.

- 3 tablespoons white wine vinegar

- Flesh of 1 small avocado
- 2 anchovies, chopped
- 3 tablespoon fresh tarragon leaves, chopped
- ¼ cup fresh flat leaf parsley leaves, chopped
- 2 tablespoons fresh basil leaves, chopped
- 2 tablespoons fresh chives, chopped
- 1/2 cup crème fraiche or Greek yogurt
- ½ cup extra virgin olive oil
- Freshly ground black pepper
