Avocado Tartine

Tartine is the French word for toast spread with stuff. Italians call it Bruschetta. We call it an easy, easy appetizer. You start with toasted slices of French bread, topped with mashed avocado.The final topping could be anything you have on hand: tapenade, chopped sun dried tomatoes, chutney, salsa, chopped tomatoes, chopped jalapeños, chopped red or green onion. The possibilities are endless.

You make a terrific impression on guests and all you had to do was toast bread and mash avocados!

For easy portable appetizers skip toasting the bread, pack the spread in the cooler and add a jar of tapenade or whatever topping you prefer. Great for tailgating!

  • 2 Chilean Hass Avocados
  • 2 tablespoons Lemon or Lime Juice or White Wine Vinegar
  • ½ teaspoon Salt and freshly ground Black Pepper
  • 1 loaf French Bread (baguette)
  • 1 cup Sun-Dried Tomatoes, chopped, prepared Tapenade, or Chutney or Salsa
  • Fresh herb sprigs for garnish

Cut bread into slices and toast.

Rinse avocado. Cut in half. Remove the pit. Spoon out avocado into mixing bowl and mash with a fork. Add lemon juice, salt and pepper and mix. Spread a small spoonful of avocado mixture on each toast slice. Top each with small spoonful of tapenade. Garnish with sprigs of fresh herbs (basil, Italian parsley, parsley, etc.)

Note: You can put the avocado, lemon juice and salt and pepper into a sealable plastic bag, and mash with your hands. Cut off the tip of one corner of the bag and pipe the spread onto toast slices.
