Avocado Apple Salad
Get ready for fall with this hearty salad. With avocado, apples, and radicchio, this salad will be sure to conquer any of your cravings.
1 head radicchio, leaves separated and torn
1 small bulb fennel, thinly sliced
2 ribs celery, thinly sliced
1 Honeycrisp apple, cut into thin slivers
1 ripe, but firm, avocado, cut into slivers
½ cup toasted pecans
½ pomegranate arils
1/3 cup extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
2 tablespoons apple cider vinegar
a generous pinch of flaky sea salt
freshly ground black pepper
In a large salad bowl, or serving platter, arrange the radicchio, fennel, celery, apple and avocado in loose layers. Sprinkle the pecans and pomegranate arils over the salad.
Whisk together olive oil, lemon juice, apple cider vinegar and sea salt. Pour dressing over the salad. Season with freshly ground black pepper and additional salt to taste and serve right away.
