Guacamole Stuffed Jack-O-Lanterns

Step 1
Carve bell pepper jack-o-lanterns with your favorite design. Remove top and scoop out seeds. Set aside.
Step 2
Halve avocados and remove seeds. Scoop into a bowl. Add lime juice, shallot and sea salt. Mash together with the back of a fork. Add the chopped bell pepper and mango, mash together again. Season to taste with sea salt. Spoon the mixture into pre-carved bell pepper jack-o-lanterns.
Serve with blue corn chips.

- 3 ripe avocados
- 1 tsp lime juice
- 1 shallot or red onion, finely crushed
- ½ chopped orange bell pepper
- ½ ripe mango, diced
- Sea salt to taste
- 2 whole orange bell pepper for jack-o-lanterns
- 1 bag blue corn chips for serving
