Turkey Avocado Lettuce Wraps
1 tablespoon olive oil
1 large yellow onion, chopped
1 lb lean ground turkey
1 tablespoon chili powder
1 teaspoon ground cumin
2 tablespoon tomato paste
½ cup water
1 avocado, halved, pitted, peeled and diced
1 tablespoon fresh lime juice
1 large tomato, cored and chopped
1 medium red onion, diced
½ cup fresh cilantro, chopped
1 jalapeño, seeded and minced
salt & pepper, to taste
12 butter lettuce leaves, washed and trimmed
Heat oil over medium heat in large non-stick pan. Add onion, chili, cumin and salt. Cook, stirring occasionally, until soft. Add turkey and cook stirring occasionally until cooked through. Add tomato paste and water and simmer until liquid evaporates. Remove from heat.
Combine tomato, avocados, lime, onion, cilantro and jalapeño in a small bowl. Add salt and pepper to taste.
Fill lettuce leaves and taco shells with warm turkey mixture and avocado salsa, dividing evenly.
Serve with fresh lime wedges if desired.
