Guacamole Stuffed Jack-O-Lanterns
Get spooky for Halloween with this fun and healthy Guacamole Jack-O-Lantern treat!
3 ripe avocados
1 tsp lime juice
1 shallot or red onion, finely crushed
½ chopped orange bell pepper
½ ripe mango, diced
sea salt to taste
2 whole orange bell pepper for jack-o-lanterns
1 bag blue corn chips for serving
Carve bell pepper jack-o-lanterns with your favorite design. Remove top and scoop out seeds. Set aside.
Halve avocados and remove seeds. Scoop into a bowl. Add lime juice, shallot and sea salt. Mash together with the back of a fork. Add the chopped bell pepper and mango, mash together again. Season to taste with sea salt. Spoon the mixture into pre-carved bell pepper jack-o-lanterns.
Serve with blue corn chips.
