Green Spinach, Kiwi and Avocado Smoothie with Almond Butter

Bright green and refreshing, this rich avocado dreamboat makes a satisfying smoothie.


1/2 small-medium avocado, pitted
1 cup apple juice

3-4 handfuls spinach (about 2 ounces)

2 kiwi fruits, peeled
 and quartered
2 tablespoons almond butter
1 teaspoon lemon juice

a few ice cubes


Scoop the flesh of the avocado out into a blender and add the remaining ingredients. Pulse a few times, then blend on high speed until it’s as smooth as possible. Serve immediately.

Serves 2.
