Avocado Green Goddess Dressing


1 clove garlic, minced
1 small shallot, minced
3 tablespoons white wine vinegar
1 tablespoon fresh lemon juice
sea salt
flesh of 1 small avocado 
2 anchovies, chopped 
3 tablespoon fresh tarragon leaves, chopped
¼ cup fresh flat leaf parsley leaves, chopped
2 tablespoons fresh basil leaves, chopped
2 tablespoons fresh chives, chopped
1/2 cup crème fraiche or Greek yogurt
½ cup extra virgin olive oil
freshly ground black pepper


Place garlic, shallot, white wine vinegar, lemon juice and a generous pinch of salt in a small bowl and let the garlic and shallot macerate for 10-15 minutes while you prep your other ingredients.

Transfer the macerated ingredients to a blender or small food processor. Add avocado, anchovies, herbs, crème fraiche, and olive oil. Blend until ingredients are incorporated. Add additional salt and freshly ground black pepper to taste. 

This Green Goddess dressing is wonderful served on a salad of hearts of romaine or butter lettuce, or it can be used for a dip for crudité.

Enough to dress 1 large or 2 small-medium salads – can be stored in the refrigerator overnight
