Avocado Egg Salad with Herbs
3 hard-boiled eggs
1 teaspoon dijon mustard
1 avocado, peeled and cut into chunks
1 shallot finely chopped, (approximately 2 tablespoons)
flaky sea salt
freshly ground black pepper
1 tablespoon chopped chives
1 tablespoon chopped Parsley
1 tablespoon chopped dill
Mash together eggs, dijon, + avocado. Stir in shallots. Season with salt and pepper. Stir in herbs. Taste for seasoning again, adding additional salt or pepper to your liking.
Serve immediately with butter lettuce and seedy bread.
